World Nutrition Day is marked every year on May 28th to highlight the importance of the right nutrition. It is of utmost importance that Malaysians continue to improve their health and body immunity level by maintaining good nutrition intake and healthy food choices.
This year's theme for World Nutrition Day is “Fuel For The Future” which encourages us to learn about making informed food choices and developing healthful eating and physical activity habits.
This World Nutrition Day, I would like to highlight the nutritional benefits of U.S. Potatoes in healthy home meals. These potatoes are great for a sustainable diet – one that is able to provide the energy and nutrients to sustain your daily activities – be it your routines, active physical requirements or even sporty activities….and overall, you can enjoy U.S. Potatoes in many many ways.
Thanks to Chef Jason Manson, I would like to share a great U.S. Potatoes snack recipe, which is not only delicious but packed with nutrients your body needs.
Oven baked US Hash brown Potato Bruschetta topped with sour cream, avocado, and salmon cucumber salsa

Potato Type: Frozen hashbrown potato
Serves: 4

Course: Appetizer, Hot Snack
Ingredients
400gm Frozen hash brown potato
100gm Avocado fresh (Slice)
20gm Sour cream
Salmon Cucumber salsa
50gm Smoked Salmon (small cube)
50gm Japanese Cucumber (Small cube)
20gm Tomato (small cube)
20gm Red Shallot (Small dice)
10ml Oil
5gm Salt
2gm Pepper
Preparation
1. Standby a small size mixing bowl. Mix the smoked salmon, cucumber, tomato, shallot, oil and seasoning.
2. Pre heat the oven 350 Fahrenheit (180 Celsius). Arrange the frozen hash brown potato on the tray. Baked the frozen potato for 10-12 minutes.
3. Transfer and arrange the potato on the plates. Place slice avocado on top of the hash brown. Next add the salmon cucumber salsa topping on top of the avocado layer. Garnish with some sour cream on top.

● U.S. Potatoes are rich in Vitamin B6, with one medium potato providing 10% of the recommended daily value. Vitamin B6 is important for proper cell function and helps with metabolism.
● Potatoes have 3 grams of plant-based protein per serving. Protein is the building block for growth and a key component of muscles, ligaments, and connective tissues.
● High in potassium - One medium size skin on a potato contains 620 milligrams of potassium or 15% DV more than a medium-size banana.
