Blueberry Crumble Cake with Oregon & Washington Blueberries Goodness!

This weekend I felt like baking. So, I decided to try out Chef Bob Kamaruddin Adnin's Blueberry Crumble Cake recipe. It is quite easy to make. But what important - it is delicious and filled with Oregon & Washington Blueberries goodness!


Oregon and Washington are the two top blueberry producing states in the U.S. Owing to ideal growing conditions, these two states offer the best quality fruits that garnered much popularity the world over. Blueberries are known to be a heart-healthy superfood that’s highly versatile, can be enjoyed as it is - a snack or incorporated into various recipes.

Here's the step-by-step guide to make the delicious Blueberry Crumble Cake.

INGREDIENTS


Crumble Topping
  • 100 gram - Sugar
  • 45 gram – Plain flour
  • ½ tsp – Cinnamon powder
  • 55 gram – Butter (cut into pieces)


Cake batter
  • 55 gram - Butter or margarine
  • 160 gram - Sugar
  • 1 - Egg
  • 125 ml – Fresh Milk
  • 225 gram – Plain Flour
  • 2 tsp – Baking Powder
  • ½ tsp - Salt
  • 280 gram - Oregon or Washington fresh Blueberries
METHOD

Crumble Topping

Mix all the ingredients with a Pasta Serving Spoon. You can do this by hands too if you like. Just mix until it turns into "coarse breadcrumbs" like shown above. Set aside while we mix our cake batter.   

Preheat oven to 180° C. Grease a 9- inch square or round baking dish. I used baking paper.

Mix the butter and sugar together on a moderately high speed in a mixer until well blended, fluffy and light yellow.

Add the eggs and beat to combine. 

Then mix in the milk.

Sift the flour, baking powder, salt and stir just enough the blend the ingredients

Add the fresh Oregon or Washington blueberries and stir. Save a few blueberries for the topping.

Transfer the cake batter to the baking dish

Sprinkle the topping over the cake batter

Make sure the batter is covered with topping evenly.

Add some blueberries on top of the topping to add a pop of blue colour! We are making Blueberry Crumble Cake, aren't we?

Bake at180°C for about 40 to 50 minutes. Check the doneness by inserting a toothpick in the middle of the cake. If it comes out clean, with no batter sticking on it, well congratulation, your cake is done!

Crumbly, sweet and delicious topping!

Dietary fibre has been shown to provide numerous health benefits, including improving blood lipid levels, regulating blood glucose, and increasing satiety (makes you feel full longer), which may help with weight loss.


3. Blueberries are rich in antioxidants

Blueberries are believed to have one of the highest antioxidant levels of all common fruits and vegetables.

Antioxidants protect your body from free radicals, which are unstable molecules that can damage your cells and contribute to aging and diseases.


4. One cup (148g) of blueberries contributes 36% of your daily value of vitamin K, 28 micromilligrams of vitamin K.

Low intakes of vitamin K have been linked to a higher risk of bone fracture. However, adequate vitamin K intake improves calcium absorption and may reduce calcium loss.

Blueberries are certified as a heart-healthy food by the American Heart Association and contain natural compounds that help the brain stay strong.
