#irunsoicaneat: Natural Delights Medjool Dates Chia Seeds Oatmeal Cookies


Wholesome and versatile, Natural Delights Medjool Dates can be enjoyed all year round and just not limited to Ramadan month. Today, I decided to bake some delicious dates cookies for my friends.

I love the Medjool dates as it is - a snack or to incorporate it into various recipes. Power-packed with energy, it is high in calories particularly carbohydrates (74 grams) for the energy I need to boost up my run! 


It is also high in natural fibre, with nearly 8g of fibre in 100g of dates. This natural fibre helps to regularise bowel movements, ease constipation, and improve overall digestive health. It is naturally sweet and hence, I can reduce the amount of processed sugar into my recipes.

Dates Chia Seeds Oatmeal Cookies (Recipe by Georgen Thye)

Make 20 cookies Time: 30 minutes
 

Ingredients:
  • 10 Natural Delights Medjool Dates, pitted and tear/ chopped into small pieces
  • 1 cup instant oats
  • 1 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 120g unsalted butter, softened
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1/8 cup chia seeds
 

Instructions:
  • Preheat the oven to 180 degree celsius and line a baking tray with parchment paper.
  • In a medium bowl, whisk together the oats, flour, baking soda, salt, and cinnamon.
  • In a separate large bowl, cream the softened butter and brown sugar together until light and fluffy.
  • Add the egg and vanilla extract to the butter-sugar mixture and whisk until well combined.
  • Add the dry ingredients to the wet ingredients and stir until well combined.
  • Fold in the Natural Delights Medjool dates and chia seeds.
  • Roll the dough into small balls and arrange onto the prepared baking tray, spacing the cookies about 2 inches apart.
  • Press them down gently with a fork
  • Bake for 15 minutes or until the edges are golden brown.
  • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
